A healthy take on the classic Lemon Slice.

I think I’ve mentioned this before but I really LOVE lemons!  And lucky for me, lemons are in season as its winter in NZ.  Our lemon tree is full of lemons which means our fruit bowl is over-flowing with lemons waiting for me to incorporate into more tasty and healthy recipes that I can share with you all.

I used to love the classic Lemon slice so I decided to recreate this dish into a healthier version which was still super tasty.  I removed the sugar, butter and refined flours and replaced these with healthier alternatives which resulted in a healthier yet still very delicious Lemon Slice which got the tick of approval from the family.

The great thing about lemons is that firstly, they are super versatile and can be used in sweet and savoury dishes and the bonus is that lemons are also so good for you.

Lemons are high in Vitamin C (great during these cooler months), they also contain a large amount of soluble fibre.  As a result of this, lemons are said to support heart health, help to control weight and also reduce the risk of cancer.

Overall, not only are lemons healthy, they have a desirable taste and smell which means they are a great addition to any meal.

This is another super simple recipe that the whole family can enjoy.  It also freezes well.  As a type this post, I’m nibbling on a piece of the lemon slice that I just pulled out of the freezer.

I’ve included a few options for ingredients below so hopefully you will find most ingredients in your kitchen pantry.

Ingredients

Base:

  • 2 1/2 T coconut oil
  • 1/4 c + 1T coconut flour
  • 1/4 c almond flour
  • 1 T coconut sugar/honey/maple syrup etc
  • 1/2 c desiccated coconut
  • 1 egg white (save yolk for top)
  • 1/2 t vanilla extract
  • zest of 1/2 lemon
  • optional: 8 drops of lemon essential oil
  • pinch of salt

Filling:

  • 3x eggs + 1x reserved egg yolk
  • 1T lemon zest
  • 1/2 c lemon juice
  • 3-4 T honey
  • 2 T brown rice malt syrup (or sweetener of choice – coconut sugar, maple syrup etc)
  • 1 T coconut flour
  • 2 T almond flour

Directions

Base:

  1. Pre-heat oven to 180C
  2. Line a loaf tin with baking paper
  3. In a saucepan over low heat, melt coconut oil.
  4. Add remaining ingredients (excluding egg white) to saucepan and combine.
  5. Remove from heat and add beaten egg white to saucepan.
  6. Add mixture to loaf tin
  7. Bake for 10-12 minutes (until golden round the edges)
  8. Let cool for 20-30 mins

Filling:

  1. Beat eggs until frothy
  2. Add remaining ingredients and beat until combined
  3. Pour over (cooled) base
  4. Bake for 20-25mins (until set)
  5. Let slice cool and then sprinkle over coconut flour or powdered coconut sugar
  6. Remove from tin and cut into squares/bars.
