As a busy mum, I love having something healthy on hand to reach for when I feel the urge to snack (which seems to be often especially since I’m breastfeeding….). And these muesli bars are a delicious option. Not only for me, they seemed to be popular with Stella and James as well! A great option for both adults and kiddies alike. Note to self, must make a bigger batch next time!
The dangerous thing about being at home all day long is the temptation of the pantry…. So I always make sure that I have something nutritious that I can grab for morning/afternoon tea AND an option that requires no preparation is key.
These muesli bars are great to have on hand – store in the fridge and grab when the 3pm hunger pangs hit, they’re also great to take to work for a snack and great to add to the kids lunchboxes. These Muesli bars also store well in the freezer so they are on hand whenever you need them.
What makes these muesli bars even better is that they are super easy – you literally throw all the ingredients together in the one bowl and bake. They are also low in sugar and full on nutritious ingredients – high I’m protein, iron and antioxidants.

- 1c activated Buckwheat groats
- 1/2 c puffed rice
- 1/4 c pumpkin seeds
- 1/4 c sunflower
- 1/4 c sliced almonds / cashews
- 1/8 c almond meal
- 1 1/2 t pure vanilla extract
- 1/2 t cinnamon
- 1 T chia seeds
- 1/4 c shredded coconut
- 1/4 t salt
- 1/4 c + 1T sweetener
- 2T nut butter
- 75g dark chocolate (.70%)
- 1/2T cacao nibs
- Preheat oven to 170C and line a loaf tin
- Combine dry ingredients
- Add dry ingredients and combine
- Pour mixture into pre-prepared lined loaf tin
- Press the mixture firmly (really pack this down)
- Bake for 25-30mins
- Allow to cool completely
- Melt chocolate and drizzle over dark chocolate
- Place in the freezer for 15mins
