This recipe will bring back childhood memories! I loved Rice Bubble slice when I was growing up so I created a healthy alternative that tastes just as good. This recipe is free from refined sugar, gluten, dairy and nuts. I hope you love it as much as we do! x

I’m sure most of you remember the traditional Rice Bubble slice from when you were growing up…..?  I definitely do, especially at birthday parties. We all loved it when we were kids.  So I set out to create a healthy alternative that tasted just as good so the kids could enjoy it!  The traditional slice was made up of sugar, butter, honey and rice bubbles so I have substituted these and opted for whole food ingredients that result in a slice that kids both big and small will love.  The perfect wee snack.

This slice is another super simple recipe.  The kids will love helping to prepare it, its a great lunch box snack and its also super tasty – we all enjoy it in our household.

When I made this slice, I made two batches which included a more traditional vanilla option and then a chocolate version.  Feel free to choose one to save on time and dishes or make both so you have the option of two different tasty flavours.  You can also halve (or double) the recipe depending on how many mouths you have to feed and if you prefer either the vanilla or chocolate version.

I chose to use Brown Rice Puffs as the only ingredient in these is Brown Rice.  You can use Rice Bubbles (preferably made from brown rice) but just be mindful that some can contain quite a bit of sugar in the ingredients.  And for those gluten free, some rice bubbles also contain barley.

I’ve made this recipe with Stella.  Its such a simple recipe so great to get the kids help.  Stella loved it.  And because there is no cooking time, its also good for the kids as there isn’t too much waiting time and lots of opportunity to taste test as you are putting the mixture in the tins.

I put the mixture in mini muffin cases (great for kids) but you can also put in a loaf tin and slice into bars once cooled.

Its best to store the crackle in the fridge and it should last up to a week (if its not eaten before then).  Throughout the week I put in the kids lunchboxes and when we craved a sweet treat, it was ready to go in the fridge.  Just what I like.

This is one recipe you are going to want to save and make all year long.  The kids (and bog kids) will love it.

Ingredients

Vanilla Rice Puff Bars*

  • 3/4 c rice puffs
  • 1/4 c activated Buckwheat groats (or more rice puffs)
  • 1/4 c shredded coconut
  • 1/8 c currants / raisins / goji berries / chocolate chips / nuts / seeds etc
  • 1/4 c coconut oil
  • 1 1/2 – 2 T sweeter of choice (i used Brown Rice malt syrup & honey)
  • 1/4 t pure vanilla extract

Chocolate Rice Puff Bars*

  • 3/4 c rice puffs
  • 1/4 c activated Buckwheat groats (or more rice puffs)
  • 1/4 c shredded coconut
  • 1/8 c currants / raisins / goji berries / chocolate chips / nuts / seeds etc
  • 1/4 c coconut oil
  • 2 T sweeter of choice (I used Brown Rice malt syrup & honey)
  • 1T raw cacao powder
  • 1/4 t pure vanilla extract

*Note: each of these recipes makes 16-18 mini muffins

Directions

  1. Melt coconut oil, sweetener, pure vanilla extract (& raw cacao powder if using) and mix together.  Allow to cool slightly
  2. Mis dry ingredients together.
  3. Combine slightly cooled wet mix with dry mix and combine
  4. Pour into mini muffin tins (or a loaf tin)
  5. Put in fridge to cool
  6. Once cooled and set, if using a loaf tin carefully slice into bars
  7. Store in the fridge for up to 1 week

Notes: *Use organic ingredients when possible. *Use activated buckwheat groats if possible (if using). *If you would like the mix to be sweeter, use more honey. *You can add whatever additions you have in your pantry ie nuts, seeds, dried fruit, chocolate chips etc. *You can store the Rice Puff crackle in the fridge for up to a week. *The chocolate version has slightly more sweeter in case kids find the raw cacao powder a bit strong.
