I know I’ve mentioned it numerous times before but I LOVE coconut. I use it in so many of my recipes and I don’t know what my life would be like without my coconut!! I’m sure I have it on a daily basis – both in savoury and sweet dishes. Stella is also taking after me and always gets the thredded coconut out of the pantry and as a result loves my coconut treats I make.

Banana Oat Cookies
Super simple and healthy Oat Cookies that the kids will enjoy making and eating.
Now firstly I want to point out that this recipe is NOT Gluten Free. Whilst I am Coeliac and most of the food eaten in our household is Gluten Free, Stella still has oats for brekkie in her Porridge and Bircher. As a result of this, I know she loves them so I thought why not make her a cookie that is healthy enough for her to snack on all day long. However, I have included a gluten free option as well.
I only wish that I could eat oats. Oats are one of the most nutritious grains. They are a great source of vitamins, minerals, fibre and antioxidants. They have a low glycemic index, maintaining blood glucose levels keeping you fuller for longer. Whilst most people who are gluten intolerant are fine with Oats, I would recommend that Coeliacs steer clear of them. Many Coeliacs do not react to oats in terms of feeling any physical symptoms however irreversible damage can still occur, in other words they can be toxic to people with Coeliac disease. Read More

I think I’ve mentioned this before but I really LOVE lemons! And lucky for me, lemons are in season as its winter in NZ. Our lemon tree is full of lemons which means our fruit bowl is over-flowing with lemons waiting for me to incorporate into more tasty and healthy recipes that I can share with you all.
I used to love the classic Lemon slice so I decided to recreate this dish into a healthier version which was still super tasty. Salmon & Kumera Cakes
A simple dinner that the kids will love - packed full of wholesome goodness.
So I’ve been a little busy recently with the new addition to our wee family. But I’m still getting to the kitchen when I can to experiment with a few recipes. I just haven’t found the time to post. While I was in nesting mode (towards the end of my pregnancy) I prepared a few meals for Stella (2 1/2 years) and James & I. The idea of worrying about meals each night with a newborn was and is not ideal.

I’ve always loved banana bread/cake. I remember eating both throughout my childhood, however, I would hate to think of all the refined ingredients and sugar that was probably used to make these recipes. Ginger & Lemon Crunch
A quick and easy, tasty slice using two flavours that complement each other so well - ginger and lemon.
This recipe uses one of Hunter Gatherer Gourmet’s Paleo cake mixes for the base – The Ginger cake mix. I have tweaked this in order to make more of a crunchy ginger base (vs. a softer cake base). The best thing about this recipe (and these mixes) is that you will not be able to tell that this is a healthy, unprocessed and refined sugar free crunchy ginger base.
I combined this with a creamy raw lemon icing which includes the addition of a lemon essential oil which takes this flavour to the next level.
