You know I'm a sucker for anything citrus so here is another tasty Lemon recipe. A perfect grab-and-go snack and a great lunchbox option for the kids.

Our tree is still bursting with lemons so I thought I’d create another recipe full of lemon-y goodness.

These bliss balls make the perfect healthy and tasty snack. They are free from gluten, dairy and refined sugar and are also low carb. This delicious recipe combines two of my favourite ingredients – a tasty blend of creamy coconut and zesty lemon and coconut. These Bliss Balls are a super simple easy to make no bake recipe. It literally involves placing all ingredients into a blender and rolling them into balls – Easy peasy!! Read More

Cacao & Coconut Granola

Cacao & Coconut Granola

Cacao & Coconut Granola

  • Servings: Makes around 5 cups

My Cacao and Coconut granola is chocolatey, crunchy, full of superfoods and super simple to make! This breakfast has definitely become a family favourite in our household

I love making my own granola.  And whipping up your own granola is super simple and its such a great alternative to many of the store bought granola’s which are full of unnecessary unhealthy ingredients.

The best thing about making your own granola is choosing exactly what you like to go in it and you can use what you have on hand so you can change it up each time you make it.

This recipe is full of superfoods and healthy fats.  The base ingredient is raw activated buckwheat.  A great gluten free option full of fibre, protein and vitamins. I have chosen to use coconut oil which is nutritious and has a light flavour – feel free to mix this up with another healthy alternative.  Read More

Raw Bounty Bar

Tasty, creamy and coconut-y goodness covered in homemade raw chocolate. A tasty and healthy treat - perfect to indulge yourselves!!

I know I’ve mentioned it numerous times before but I LOVE coconut. I use it in so many of my recipes and I don’t know what my life would be like without my coconut!! I’m sure I have it on a daily basis – both in savoury and sweet dishes. Stella is also taking after me and always gets the thredded coconut out of the pantry and as a result loves my coconut treats I make.

I grew up eating the sugar filled, processed Bounty Bars and decided that I’d recreate a healthier version of these – I do love recreating healthier versions of popular treats. This recipe also ticks all the right boxes – gluten free, dairy free, refined sugar free, egg free and of course super tasty! Read More

Banana Oat Cookies

Super simple and healthy Oat Cookies that the kids will enjoy making and eating.

Now firstly I want to point out that this recipe is NOT Gluten Free. Whilst I am Coeliac and most of the food eaten in our household is Gluten Free, Stella still has oats for brekkie in her Porridge and Bircher. As a result of this, I know she loves them so I thought why not make her a cookie that is healthy enough for her to snack on all day long.  However, I have included a gluten free option as well.

I only wish that I could eat oats. Oats are one of the most nutritious grains.  They are a great source of vitamins, minerals, fibre and antioxidants.  They have a low glycemic index, maintaining blood glucose levels keeping you fuller for longer.  Whilst most people who are gluten intolerant are fine with Oats, I would recommend that Coeliacs steer clear of them. Many Coeliacs do not react to oats in terms of feeling any physical symptoms however irreversible damage can still occur, in other words they can be toxic to people with Coeliac disease. Read More

A quick and easy healthy sweet slice combining two of my favrouite ingredients - Lemon & Coconut.

I love anything flavoured with lemon and I’ve mentioned before how much I love coconut – this recipe combines both. Definitely a great baking combo! We always have lemons on hand at home and I use them throughout the day, starting the day with a glass of water with lemon juice, with Avocado for breakfast, over salads and in my herbal teas. In terms of Coconut, I also use this throughout the day, when I have Bircher in the morning and over salads for lunch/dinner. I also obviously love creating recipes which include both ingredients.
